

Wort : The sugary extract from mashing that is mixed with the hops in the boil kettle. Prior to fermentation, it is not beer, it is wort as there is no alcohol in it.
Yeast : single cell organisms that feed on sugars. The 2 concerned in brewing are
Saccharomyces cerevisiae or ale yeast and Saccharomyces uvarum or lager yeast.
Yeast undergo reproduction by budding a new cell on it’s outer wall.
